Blend: Recioto comes from blending the grapes from the following vine varieties in the percentages specified: Corvina veronese (or Cruina ) 40-70%, Rondinella 20-40% and Croatina max 10%
City: Cellore, hamlet of Illasi.

Age of the vines: 40 years.

Exposure: East-west vineyard layout; altitude 240 meters above sea level.

Type of soil: Medium texture, presence of skeleton.
Output: 40 quintals/ha; 1 ½ kg per vine

Raisin-drying, vinification and fermentation: raising-drying 120 days; crushing/ destemming, controlled temperature fermentation with inoculation of selected yeasts (saccharomyces cerevisiae)
Refinement: thirty six months in American oak barriques.
Harvest: October, by hand.
Aging: Even during the first year but two years is preferred.
Characteristics (color, bouquet, flavor): Colors the glass with moving full redness. Characteristic intense bouquet of red fruit with a distinctive taste of cherry and morello cherry jam that envelopes the palate with smooth fullness.
Alcohol content: 14°
Serving temperature: Uncork a few minutes before serving. Excellent when served at 18 degrees.
Dining combinations: Excellent with all types of dessert. Mr. Carlo suggests you drink it together with fine plain chocolate.
